Nestled between Lake Ontario and the Niagara Escarpement lies the world class wine growing region of Niagara. The Niagara microclimate is perfectly suited to the production of fine wines.
Enjoy the attention of a wine grower as they explain the procedure and process that goes into making their fine wines. Sample a selection of three vintages to find your favourite.
Your winery stop will offer you the opportunity to sample the wines, and also buy local produce including grapes and fresh fruit.
Bottles of wine are available for purchase, as well as some souvenir and wine themed gift items.
The wine tasting operates all year round and is spectacular in every season.
Ice-wine is a uniquely Canadian product that has been referred to as the ‘Nectar of the Gods’. Ice-wine was once used only as a dessert wine due to its sweetness, acidity and complexity.
Now Canadian chefs also use it to make great dishes. Don’t make a trip to Canada without trying this “liquid gold”. Ice-wine is rare and difficult to produce and few countries have the proper conditions to produce it. The grapes hang past autumn until the temperature freezes.
The grapes continue to ripen and dehydrate and develop a distinctive taste profile. Ice-wine is often harvested in December or after a minimum of 3 days of consistently freezing temperatures. The diverse flavours of ice-wine come from the characteristics of each individual varietal grape.
